BLTA Stuffed Tomatoes

INGREDIENTS

  • 8 medium tomatoes

  • 2 packed cups shredded romaine lettuce

  • 2 medium avocados, diced

  • 8 slices of bacon, cooked and chopped

  • 1/4 cup ranch dressing

  • sea salt and black pepper (optional)

DIRECTIONS

  1. Slice tops off the tomatoes. Cut around the inside, then use a spoon to scoop out and discard the flesh. Flip over and set aside to drain.

  2. In a medium bowl, toss together the romaine lettuce, diced avocado, bacon, and ranch dressing.

  3. Use paper towels to pat the insides of the tomatoes dry. Stuff the tomatoes with the salad mixture so that they are heaping over the top. Sprinkle lightly with sea salt and black pepper, if desired. Serve immediately.
