Cauliflower Fried Rice

ingredients

  • 4 cups riced cauliflower (fresh or frozen)

  • 2 tbsp sesame oil

  • 1 cup frozen peas and carrots

  • 2 tsp minced garlic

  • 2 eggs, whisked

  • ¼ cup soy sauce

  • pinch of crushed red pepper flakes (optional)

  • green onions, sliced

instructions

  1. Combine riced cauliflower, peas and carrots, garlic, and sesame oil in a large skillet.

  2. Sauté for 5-7 minutes until tender and fragrant. 

  3. Push cauliflower and veggies to one side of the pan. Add whisked eggs to the empty side of the pan. Allow them to cook for about 2 minutes undisturbed, then whisk them into the rice mixture.

  4. Stir in soy sauce, crushed red pepper flakes, and green onions. Serve immediately & enjoy!
