Cauliflower Ham Casserole
Ingredients
9 ounces ham, cubed
½ of a yellow onion, diced
8 ounces cauliflower, chopped into small pieces
¾ cup shredded cheddar cheese
3 eggs
1 cup cottage cheese
¼ cup Pork Panko

Pre-heat oven to 350°F.
Combine all of the ingredients (except for the Pork Panko) and stir until thoroughly mixed.
Place the mixture into 9 x 13 baking dish that has been lightly coated with cooking spray.
Sprinkle the Pork Panko evenly over the mixture.
Bake uncovered for 40-45 minutes or until lightly brown.
