Cowboy Burger

Ingredients

  • 1 1/2 pounds ground chicken

  • 1/4 cup finely chopped yellow onion

  • 1/4 cup finely chopped cilantro

  • 2 cloves garlic, finely chopped

  • 2 tsp chopped jalapeno chile

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1/3 cup shredded cheddar cheese

  • salt & pepper

  • butter lettuce for the “buns”

  • 1/4 red onion thinly sliced

  • 1 cup guacamole

  1. Preheat an outdoor grill or grill pan to medium heat.

  2. Put the ground chicken in a medium bowl. Add the cilantro, garlic, jalapeño, cumin, paprika, and cheese and season with salt and pepper. Use your hands to incorporate the ingredients into the chicken.

  3. Form the mixture into four 1/2-inch thick patties. Grill the burgers until cooked through, 5-7 minutes per side.

  4. Serve each party on the butter lettuce “bun” topped with guacamole and sliced red onion.
