Goat Cheese Bacon Flatbread

ingredients

  • 1 cutdacarb flatbread

  • 2 oz goat cheese 

  • 2 slices bacon, cooked & torn

  • Arugula 

  • 1 of each, yellow, orange, and red bell peppers roasted, peeled, and sliced

  • 1 tsp olive oil 

  • Salt and pepper

Directions

  1. Preheat the oven to 375 degrees F.

  2. On a baking sheet with parchment paper, lay flatbread and spray with oil.

  3. Top with goat cheese, sliced peppers, and pieces of bacon.

  4. Bake for 5-10 minutes, depending on desired done-ness.

  5. Remove from the oven, top with arugula, drizzle with olive oil, sprinkle with salt and pepper.

  6. Serve immediately.

    Tips

    *To easily peel peppers, cut in half and bake at 375 until slightly charred. Place in a ziplock bag to steam for 10 minutes. Remove skin and slice.
