Grilled Mini Peppers with Goat Cheese

INGREDIENTS

  • 1 pound mini sweet peppers

  • 1/2 Tbsp olive oil

  • 4 oz. goat cheese

  • kosher salt and pepper

  • rosemary

  • thyme

  • Maldon finishing salt 

DIRECTIONS

  1. Slice and de-seed peppers.

  2. Drizzle with olive oil, sprinkle with salt and pepper.

  3. Char peppers cut-side down, then flip.

  4. Stuff with goat cheese, sprinkle with herbs, finish with Maldon salt.
