High Key Pancakes
Ingredients
½ cup Highkey™ Pancake Mix
3 tbsp unsweetened almond milk
2 tbsp coconut oil
¼ tsp vanilla extract
1 egg
Optional Toppings
2 tsp butter (+1 Block)
Walden Farms or other sugar-free maple syrup
Directions
Preheat griddle/pan to medium heat.
Pour ½ cup pancake mix into a mixing bowl.
Melt coconut oil in a small container in a microwave for 30 seconds - mix with a spoon until liquid & do not overheat.
Add the egg, coconut oil, almond milk, and vanilla extract to the pancake mix. Mix until well blended with a rubber spatula or large spoon. Let the batter rest for 3 minutes.
Spray griddle/pan with oil.
Place 2 tbsp pancake batter onto the heated griddle/pan, spacing each pancake 4” apart.
Cook 2-3 minutes per side.
Serve with desired toppings and enjoy!
