Honey Dijon Brussel Sprouts
ingredients
1/4 cup olive oil
1 tsp fresh thyme leaves, roughly chopped
1/2 tsp red pepper flakes
1 1/2 lb brussel sprouts, trimmed and halved
2 cloves chopped garlic
2 oz lemon juice
Kosher salt and freshly cracked pepper
“Honey” Dijon Drizzle
3/4 cup mayonnaise
1/3 cup dijon or yellow mustard
1/3 cup erythritol
1 tbsp apple cider vinegar
Pinch of salt
Pinch of cayenne

In a large skillet combine the oil, thyme, and red pepper flakes over medium-high heat for about 1 minute, until fragrant.
Add the Brussels sprouts and cook for 12-15 minutes, until golden brown, stirring frequently to make sure they cook evenly. A minute before the Brussels sprouts are done, add the garlic and stir to combine.
Remove from the heat, squeeze in the juice from 1/2 lemon, and season with salt and pepper. Taste and adjust the lemon juice, salt and pepper as needed. Top with optional pecorino cheese and sugar-free honey mustard and Enjoy!
