Pesto Egg Cups
ingredients
12 slices prosciutto
12 eggs
6 tbsp pesto
fine sea salt
freshly ground pepper
Cooking spray
directions
Preheat the oven to 350 degrees.
Lightly spray each well of a muffin tin with cooking spray.
Line each well with parchment paper.
Place a piece of prosciutto into each well like a muffin liner.
Crack one egg in each prosciutto pocket and season with fine sea salt and freshly ground pepper.
Bake for approximately 10-12 minutes or until eggs are done to your liking.
Remove from oven and spoon ½ tbsp pesto on top of each egg & enjoy!
