Pesto Egg Cups

ingredients

  • 12 slices prosciutto

  • 12 eggs

  • 6 tbsp pesto

  • fine sea salt

  • freshly ground pepper

  • Cooking spray

directions

  1. Preheat the oven to 350 degrees.

  2. Lightly spray each well of a muffin tin with cooking spray.

  3. Line each well with parchment paper.

  4. Place a piece of prosciutto into each well like a muffin liner.

  5. Crack one egg in each prosciutto pocket and season with fine sea salt and freshly ground pepper.

  6. Bake for approximately 10-12 minutes or until eggs are done to your liking.

  7. Remove from oven and spoon ½ tbsp pesto on top of each egg & enjoy!
