Sun-Dried Tomato Stuffed Chicken

  • 4 6 oz chicken breasts

  • 4 oz fresh mozzarella. sliced

  • 8 pieces sundried tomato in oil, drained, chopped

  • 1 tbsp olive oil

  • Basil 

  • Salt + pepper + oregano

  • Balsamic glaze (optional)

INSTRUCTIONS

  1. Preheat oven to 400 F.

  2. Season chicken on both sides  with salt, pepper, and oregano.

  3. Slice open chicken breasts half-way.

  4. Stuff with the mozzarella, sun-dried tomatoes, and basil. Secure with toothpicks and drizzle with oil from sun-dried tomatoes. 

  5. Bake for 20-25 minutes.
