Sun-Dried Tomato Stuffed Chicken
ingredients
4 6 oz chicken breasts
4 oz fresh mozzarella. sliced
8 pieces sundried tomato in oil, drained, chopped
1 tbsp olive oil
Basil
Salt + pepper + oregano
Balsamic glaze (optional)
INSTRUCTIONS
Preheat oven to 400 F.
Season chicken on both sides with salt, pepper, and oregano.
Slice open chicken breasts half-way.
Stuff with the mozzarella, sun-dried tomatoes, and basil. Secure with toothpicks and drizzle with oil from sun-dried tomatoes.
Bake for 20-25 minutes.
