Cheesy Cauliflower Mash
Ingredients
1 head of cauliflower
2 tbsp. heavy cream
1 tbsp. butter
2 oz. dubliner cheese
salt and pepper
Directions
Clean and trim the cauliflower, breaking it into medium-sized pieces.
Place in a microwave-safe bowl with the cream and butter.
Microwave uncovered, on high for 6 minutes.
Stir to coat the cauliflower with cream/butter mixture. Microwave for an additional 6 minutes.
Remove mixture from the microwave & combine with cheese in a high-speed blender or food processor.
Puree until smooth.
Season with salt & pepper for taste.
