Chicken-Avocado Burgers with Lemon Aioli

 

Ingredients

  • 1 avocado

  • Juice of ½ lemon

  • 2 cloves garlic

  • 1.5 tbsp. Mayonnaise 

  • 10 oz. ground chicken 93% fat-free, raw

  • Salt and pepper to taste

 

Directions

  1. Halve avocado and discard pit. Using a spoon, carefully scoop out flesh, discarding skin. Roughly chop avocado half and place in medium bowl for making burgers; thinly slice remainder and set aside until ready to serve. Halve lemon. Mince garlic.

  2. Add half of garlic, ½ tsp. Kosher salt, and pepper as desired to bowl with chopped avocado and stir to combine. Add chicken. Using your hands, mix well, then form into 2 equal patties (about 1” thick). Place burgers on plate, cover with plastic wrap, and chill in refrigerator for at least 5 minutes (this will help them hold their shape as they cook).

  3. Heat 1 tbsp. Olive oil in pan over medium heat. When oil is shimmering, add burgers and sear until browned on bottom, 5-6 minutes. Flip, cover pan, and continue searing until cooked through, 5-6 minutes more.

  4. While burgers sear, in a small bowl, stir mayonnaise, juice of lemon half, and remaining garlic to combine. Season with ⅛ tsp. Kosher salt and pepper as desired.

  5. Plate chicken avocado burger, top with sliced avocado, then drizzle over lemon aioli.
