Pesto Chicken Caprese

 

Ingredients

  • 3-4 boneless skinless chicken breasts (about 2 lbs)

  • 4 tbsp. pesto

  • 2 roma tomatoes

  • 8 oz. fresh mozzarella cheese

  • Fresh basil

  • Balsamic glaze optional

 

Directions

  1. Preheat the oven to 375 degrees Fahrenheit. 

  2. Lay the chicken breasts flat in a baking dish. Salt and pepper each side. 

  3. Spread 1 tbsp of pesto evenly on each chicken breast.

  4. Top with tomato slices and cheese.

  5. Bake 30-40 minutes or until chicken is cooked through to an internal temperature of 165 degrees Fahrenheit.

  6. Garnish with fresh basil.
