Pesto Chicken Caprese
Ingredients
3-4 boneless skinless chicken breasts (about 2 lbs)
4 tbsp. pesto
2 roma tomatoes
8 oz. fresh mozzarella cheese
Fresh basil
Balsamic glaze optional
Directions
Preheat the oven to 375 degrees Fahrenheit.
Lay the chicken breasts flat in a baking dish. Salt and pepper each side.
Spread 1 tbsp of pesto evenly on each chicken breast.
Top with tomato slices and cheese.
Bake 30-40 minutes or until chicken is cooked through to an internal temperature of 165 degrees Fahrenheit.
Garnish with fresh basil.
